Three tries to get it right
Every Skerrick batch starts as three trial brews, and the panel only promotes one. For SK-03-87, the first attempt was too sweet, the second too bitter, and the third — with the hopping moved fifteen minutes later in the boil — finally sang.
That winning trial became the recipe: copper-malt heavy mash, citrus whole-flower hops, and six slow weeks in our Manchester cellar.
Why 24 bottles, never more
Small runs keep every bottle from the same barrels, conditioned the same days, tasting the same way. When the 24 are gone, the batch is history — and the next edition has to earn its own number.
